People eat Oden especially in Winter. There are a variety of stews in Japan like <a href="https://tabemonomadness.com/nikujaga-meat-and-potatoes-rou-ziyaga/">Nikujaga</a>, Pumpkin stew, and so on.</p><p>Oden is a Japanese comfort food. When I was in Japan, I had Oden a lot with my family on the Kotatsu (A heated Japanese table).<br>You can also buy Oden at convenience stores in Winter in Japan.</p><p>Why do people call this dish &#x201C;Oden&#x201D;? The history of &#x201C;Oden&#x201D; goes back to the Muromachi period and from &#x201C;Dengaku&#x201D; which is a skewered and fried Tofu. At that time, people put &#x201C;O&#x201D; in front of &#x201C;Dengaku&#x201D; as a polite way to say in Japanese. Then, people started calling this dish &#x201C;Oden&#x201D; as an abbreviation of &#x201C;Odengaku&#x201D;.</p><p>I will introduce Oden to bring family and friends together in Winter and cook it at home easily.</p><p>Ingredients (About 4 bowls):</p><!--kg-card-begin: markdown--><ul>

The combination of Eggplant, Pork and Miso is great.<br>Also I added Taberu Rayu which is fried garlic flakes with chili oil to this dish in order to have a stronger taste.</p><p>&#x201C;Eggplant&#x201D; in English means &#x201C;Nasu&#x201D; in Japanese.<br>Apparently, the eggplant is originally from India and there are about 1000 kinds of eggplants in the world.</p><p>A lot of Japanese eggplants are usually longer and thinner than the American eggplants. The color of common Japanese eggplant is dark purple. Surprisingly, I saw some white eggplants in the U.S.A.</p><p>Eggplants are eaten in summer or fall in Japan. The eggplants which I cooked this time are from my garden. It&apos;s easy to grow and cook eggplants. </p><p>Enjoy eating this unique Japanese food at home!</p><!--kg-card-begin: markdown--><p>Ingredients (2 bowls):</p>

Takikomi Gohan is Japanese seasoned rice with a variety of ingredients such as vegetables, mushrooms, potatoes, and so on.</p><p>Apparently, Takikomi Gohan appeared in the Nara Period in Japan. People mixed grains, vegetables, potatoes, and so on in order to save the rice.</p><p>Actually, Takikomi Gohan is very easy to make at home. Since we just put all the ingredients in a rice cooker and the rice cooker does most of the work for us.</p><p>It&apos;s very tasty seasoned rice. I normally eat it with <strong><a href="https://tabemonomadness.com/miso-soup-wei-cheng-zhi/">Miso Soup</a></strong>. However, I can&#x2019;t go to the same restaurant in the U.S.A.<br>I thought I should try to make a similar dish at home. It turned out to be this dish.</p><p>If you would like to eat something cold for the hot weather, I highly recommend trying this dish.<br>The combination of Udon noodles, Tuna, Corn, Salad, and Deep-Roasted Sesame Dressing is so good.</p><!--kg-card-begin: markdown--><p>Ingredients (2 plates):</p>

We can add a lot of summer vegetables like tomatoes and cucumbers into this dish. The sauce has sweet and sour flavors, and cold noodles are very popular to eat in hot weather.</p><p>Hiyashi Chuka began appearing in the Showa period in Japan.<br>There are a lot of theories about who invented Hiyashi Chuka.<br>The most likely theory is that it is from the restaurants called &#x201C;Yosukosaikan&#x201D; in Chiyoda-ku, Tokyo and &#x201C;Ryutei&#x201D; in Sendai, Miyagi.</p><p>I will introduce the Hiyashi Chuka with ham, salad and sesame sauce made easily at home. I remembered that my mother made this dish a lot at home when I was in Japan.</p><p>Agedashi Tofu is a tofu coated by Katakuriko (Potato Starch), deep-fried and poured with Tsuyu sauce (Japanese soup base) or Dashi sauce (Japanese soup stock). I used a grated small Daikon radish which was from my garden as a garnish of Agedashi Tofu.</p><p>Apparently, the name of &#x201C;Agedashi Tofu&#x201D; came from the restaurant called &#x201C;Agedashi&#x201D; in Tokyo. This restaurant has existed since the Edo period. Surprisingly, customers could eat &#x201C;Agedashi Tofu&#x201D; early in the morning and take a bath at the restaurant.</p><p>I will introduce Agedashi Tofu using with Hontsuyu (Noodle soup base) to cook it at home easily. If you would like a stronger taste, you could add Shichimi Togarashi (Japanese chili flakes) and/or Oroshi Shoga (Grated ginger).</p><!--kg-card-begin: markdown--><p>Ingredients (2 plates):</p>

You would see it at convenience stores, Bento shops, grocery stores, department stores and so on.</p><p>Bento is a meal which we can take-out and carry. Japanese people bring Bento as a lunch to schools, workplaces and so on.</p><p>A lot of Japanese people make Sake Nori Bento at home. Each ingredient would be different. Depending on the people and the family.</p><p>You can use a fresh salmon and grill or bake it, however I used a frozen hot smoked salmon to make the bento easily and save time for the busy morning.</p><p>Apparently, bento first appeared back in the Heian period in Japan.<br>People in the Heian period used &#x201C;Onigiri (Rice ball in English)&#x201D; which was called &#x201C;Tonjiki&#x201D; in Japanese. Apparently, Japanese word &#x201C;&#x5F01;&#x5F53;(Bento in English)&#x201D; originally came from the word &#x201C;&#x4FBF;&#x7576;(Bento)&#x201D; in Chinese and Song dynasty in China.</p><p>Bento culture was established among Japanese people rapidly due to the fact that Japonica rice could keep the taste even though it cooled down.</p><!--kg-card-begin: markdown--><p>Ingredients (2 bento boxes):</p>

The combination of Ichigo (Strawberry), Anko (Sweet red bean paste) and Daifuku (A small round Mochi) is so good. Sweet and a little sour flavors from Ichigo Daifuku would melt in your mouth. </p><p>We also have some Ichigo Daifuku Ice Creams with custard creams instead of smooth red bean paste which are very famous in Japan.</p><p>The history of eating Ichigo Daifuku dates back to the Showa period in Japan.<br>However, there are a lot of theories as to who invented Ichigo Daifuku.<br>It is certain that Ichigo Daifuku is relatively new.</p><p>When I made Ichigo Daifuku, I made some mistakes. I highly recommend using small strawberries instead of big ones. In this way, you can wrap the strawberries easily with Koshian and Mochi dough. Also the Mochi dough is very sticky. It is better to heat and knead the Mochi dough completely. I added other notes in the procedure below.</p><p>Making Ichigo Daifuku is actually easy except for the sticky and shaping Ichigo Daifuku parts. You would enjoy making it with your family and/or friends.</p><!--kg-card-begin: markdown--><p>Ingredients (2 plates):</p>

<li>2 x 1 teaspoon *sesame oil</li>

<li>1/2 green onion</li>
<li>1 small sheet of *Nori</li>
<li>1 teaspoon white sesame (as you like)</li>

Burdock root is a plant and native to Northern Asia and Europe. Japanese people often use the burdock root as food. Burdock root has been used as a medicine and a tea in China. &#x201C;Kinpira&apos;&apos; is a dish which normally consists of stir-fried vegetables with soy sauce and sugar. Apparently, &#x201C;Kinpira&#x201D; was named after the son of &#x201C;Kintaro&#x201D; (He is in the very famous Japanese fairy tale). Kinpira Gobo is a common home-made dish in Japan. This dish has a lot of fibers and a crispy texture. I highly recommend eating this amazing dish as a side dish while you enjoy eating dinner and/or drinking!</p><!--kg-card-begin: markdown--><p>Ingredients (2 plates):</p>

<li>1/2 carrot</li>
<li>1 tablespoon *sesame oil</li>
<li>2 tablespoons *Hontsuyu</li>

Cooking time is about 15 - 20 minutes.</p><ol><li>Peel, and cut the burdock root into 2 inches long and very thinly. Put them into a small bowl with water. Add drained burdock root from step 1. and the carrot.
